Our four wines

Organic production

Our wines

Wines born from traditional Gran Canaria grape varieties. The grapes are selected bunch by bunch. Destemming is done by hand, with no machinery at all, partly to avoid crushing the stems and seeds, which impart unwanted herbaceous and astringent flavours to the wine. Pressing is light, in order to obtain a first-quality must. The entire fermentation process takes place under optimal temperature conditions and constant oenological monitoring. Artificial yeasts are never needed at any stage; it is the wild yeasts found on the grape skins and in the environment that start and carry out the alcoholic fermentation.
